The Everglades Farm is making a name for itself in the oyster industry, supplying Michelin-starred restaurants with its delicious produce.
Despite initial reservations about eating oysters from a "swampy freshwater lake", the farm's owners, Josh Wilkie and Fabio Galarce, are working to educate people about the benefits of their oysters.

Galarce notes that the oysters thrive in the Everglades' tropical environment, which is often misunderstood as just a "muddy swamp".
The farm's oysters are now being served in top restaurants in Miami, challenging the traditional association of oysters with cold waters.
